Suggestions wanted for a Pale Ale recipe

My girlfriend wants me to make a pale ale with her. The last all grain pale ale I made was about 10 years ago, and I remember being quite disappointed with it. As the grist only comprised of maris otter pale malt, maybe the taste buds and brain was expecting a lager type experience, but it certainly failed to deliver. It could be that I needed more late hops to add more aroma. Can't find the recipe that I used.

So has anyone got a pale ale recipe that doesn't disappoint? Something with a fresh and flowery note or two, and nothing below around 1042.

The only hops I've got in store at the moment are EK Goldings, Fuggles, Challenger, Target, and Northdown.

Try a Styrian Stunner if you don't mind getting some more hops

4.5kg pale malt

90 min mash
2 hr boil

21 IBUs from the hops, quantities will vary depending on their AA%

On the suggestion of Steve D I threw in a mass of hops when I turned out the boiler to give a lovely floral grapefruit smell

Thanks J_P, I've got my eye on that one for next time. I've got Marc's book, so will follow that, with the addition of a good handful of late hops.
