Post by soupdragon » Sun Feb 03, 2013 8:30 pm

Hi all

How does this look for an brew I'm planning next week?

4.000 kg Pale Malt
0.300 kg Caramalt
0.250 kg Torrified Wheat

10 g Centennial @ 75 mins from end of boil
20 g Riwaka @ 45 mins from end of boil
20 g Riwaka @ 30 mins from end of boil
50 g Riwaka @ 15 mins from end of boil
50 g Riwaka @ Flame out
60 g Riwaka Dry Hop for 7 days

Should come in at around 4.5 % abv and 45 ish ibu.

Will be using 2 sachets of Rob's dried West Coast style ale yeast.

All comments welcome as usual :)

Cheers Tom

I've read that it's very VERY grapefruity, more than any other hop.
That's what I'm hoping for anyway, fingers crossed it'll run somewhere near to plan :D

I've got some spare Chinook so may throw some in at the 30 min mark to knock things up a notch :D

Looks lovely. What is the weight of each yeast packet, as I'm not sure you would need 2? Too much and you could dry it right out and make it too thin.
Not that I've ever used that yeast, just a thought.

12 g per sachet.

The last time I used 2 sachets ( Nottingham ), the beer turned out brilliantly. I've never used this yeast before myself so thought I'd give it a go :)

Will be doing this on Wednesday.

I've decided to add 50g of Riwaka as a dry hop addition and have updated the 1st post accordingly :)

I would suggest looking at how much Caramalt is going in there. I've knocked my percentage down from 10% to <5% for pales after a few came out a bit cloying.

Hmmmm

Now you mention it, that might be a touch high. I've just gone through the previous brews I've done and the most I've used was 300g.
Taking that into account I'll reduce it down to that amount. When I do a more traditional style Bitter I'll have another play :)

Would you describe the flavour as Grapefruit?

In the Riwaka beers I've tasted, I don't pickup grapefruit exactly. It's citrusy, yes, but more like lemon or bitter orange, with some evergreen resin essence, like most hops to some degree, but I also get more of the melon and tropical fruit hints like other recent New Zealand hops, combined with that classic smoky, black-peppery thing from its Saaz parentage. Good stuff.

Hi guys, excuse my ignorance but why would 2 packs of yeast make a thin beer?

Not really grapefruit but definitely citrussy and tropical fruits as Seymour says.
I also find that 10% and above of Caramalt gives a nice vanilla / toffee flavour I'm quite partial too.
