I am trying to create a recipe for AG#2, and want to try and produce a premium, malty well hopped pale ale that isn't too bitter, along the lines of Crouch Vale's Amarillo but with Apollo.

How does this look?

I would like to come up with a standard grain bill that I can brew with other single hop varieties in the future, including Amarillo :=P

Anyway, I would like to hear what you seasoned brewers think.

Looks great. I dry hopped 60g of Apollo a few months back and it was amazing. Blackcurrant and pine - big time!

There's a popular American craft beer called Magic Hat #9 which is a fairly standard pale ale, 5.1% ABV, with Apollo hops for bittering and Cascade for aroma, plus some apricot puree added to the fermentor, which nicely compliments natural fruity ale esters.

Looks good MB.
For all my single hop brews I use pale, 8% munich and 2% flaked barley, lets the hop shine through nicely. Only ever put 100g in each brew so its a really good way to compare each hop character.
Just done a I/APA with Challenger and 100g Apollo in the last minute, its a really nice hop. I reckon you'll love it. :)
