Okay here is my stab at this:
Guzzler
Original Gravity (OG): 1.036 (°P): 9.0
Final Gravity (FG): 1.009 (°P): 2.3
Alcohol (ABV): 3.54 %
Colour (SRM): 5.3 (EBC): 10.5
Bitterness (IBU): 30 (Tinseth)
93.33% Maris Otter Malt
6.67% Crystal 15
35g Challenger (6.1% Alpha) @ 60 Minutes (Boil)
30g Celeia (4% Alpha) @ 15 Minutes (Boil)
20g Celeia (4% Alpha) @ 0 Minutes (Aroma)
30g Celeia (4% Alpha) @ 4 Days (Dry Hop)
Single step Infusion at 66°C for 75 Minutes. Boil for 60 Minutes
Fermented at 18°C with Safale S-04
The yeast choice here is a bit of an easy option but without having tasted the beer it is difficult to be accurate. Do you get anything from the yeast in this beer? Is there any chance of harvesting some of their yeast from bottles?
EDIT: Increased Bitterness from 25 to 30.

Glad to help Lee. As I said I have not tasted this beer so my recipe could be way off but should still be tasty. I do like Celeia used late in a brew like this.
BTW I calculated it for 23l into the FV.

Well, it must be a great comfort to the city folk that whenever they come under seige, they can continue supplying their own beer for awhile.
