Bought a bag of experimental hops from the malt miller a while ago so I have finally got around to brewing with them. I've gone with an IPA type of beer hopping the hell out of it with the experimentals at the end so that i can tell exactly what they taste like.

It's described as having a spicy honey taste but at the moment it's a deep almost fruity taste. It's unusual to say the least :D

Okay this is weird! Now tried after conditioning for a few weeks and its completely different! Very spicy almost smokey! Never had a beer get harsher through conditioning! It reminds me of a porter in terms of spiciness

Well unfortunately if your beer is getting "harsher" as it sits that may be indicitive of an infection. How is the carbonation? If that is rising as well my advice is to drink it quick, it will only get worse. By the way, been there, done that, got the T-shirt, it happens to all of us at some point. Incidentally, I hope I'm wrong. :D

Conditioning: Traditional bock bier, CAP

I think it's fine :) beer is crystal clear and carbonation is spot on. The hops were described as spicy but initially all I could make out was fruitiness. It is the way they were described its just weird how the flavours have come out given a few weeks

I think this hop now has the name bishop? I used it in Feb in a brown ale with simcoe and amarillo. Used all the Bishop in a whirlpool, and it turned out really well, adding some complexity to the American hops. Would use again, perhaps in a porter.

I'd second using them in a porter. They didn't mellow much in mine but then I did you the whole packet lol

I see you modified your mini kegs with a schrader valve? Is this so you can force carb?
