Inspired by a Brewing Network podcast I will be splitting my next brew into four batches with four very different yeasts. It will be split up into a three gallon carboy, 2 one gallon demi johns and a five gallon fermenting bucket. I was thinking of lagering one and was hoping for suggestions on the other three. Due to yeast costs and batch sizes I will be sticking to dry yeast.

Recipe specifics:

Style: Various
Batch size: 42.0 l
Boil volume: 53.0 l
OG: 1.051
FG: 1.013
Bitterness (IBU): 30.0
Color (SRM): 5.0
ABV: 5.0%

Grain/Sugars:

7.40 kg Pale Ale Malt, 74.7%
1.50 kg Vienna (US), 15.2%
1.00 kg CaraPils, 10.1%

Hops:

10.00 g Citra (AA 15.0%, Pellet) 60 min, 9.0 IBU
25.00 g Citra (AA 15.0%, Pellet) 15 min, 11.1 IBU
50.00 g Citra (AA 15.0%, Pellet) 5 min, 8.9 IBU
25.00 g Citra (AA 15.0%, Pellet) 1 min, 1.0 IBU
25.00 g Citra (AA 15.0%, Pellet) 0 min, 0.0 IBU

I'd include a US clean yeast, an English estery yeast, & something Belgian like a Saison yeast and maybe even a Weiss

If you want minimum postage maybe get a few from 1 source.

Maybe skip the Weiss though...

But it's an experiment, right? Using the Weiss without any wheat will demonstrate exactly what flavours the yeast itself will give off when compared like for like with others. Great idea :)

I guess for this, if you used the above suggestions, 'Ale Yeast' would be your control as it's reputedly just repackaged Nottingham.

I've tried this and it was great. The suggestions are good; UK, US, Belguim. Always get a Belgium in! Doesn't have to be Saison. T58 worked well alongside US05 for me. The smells from the FVs are very interesting.
I've got the bug and looking to get a brown and a black experiment done at some point.

I've chosen the following:

NBS Saison - 3 litre carboy
NBS English ale 1 - 1 gallon demi john
T58 - 1 gallon demi john
Saflager W34/70 - 5 gallon fermenter

Should I use the whole packet of yeast in the 1 gallon demi johns or could this cause problems with over pitching?

Any comments on the recipe for this experiment?

+1, the dry Mauri Weiss yeast is one of my favourite yeasts lately, for lots of styles, whether the recipe contains wheat or not. I love it.

I knew there was a reason I had 5 empty DJs. Just need to find some bottles to put them into.

It produced a delicious hazy golden ale, not very hefeweizen-like at all, except maybe that hint of banana which regular English ale strains produce at warmer temps too. And (in my humble opinion), my latest dark mild with Mauri Weiss yeast is to die for. Yep, even tastier than the Marble yeast version: I was shocked. That name is arbitrary though, I think it could pass for a nice complex table-strength bitter just as well.

I highly recommend that yeast for any ol' ale you want to possess some extra subtle yeasty character. And instead of an airlock, really let the fermentor breath by simply placing a sanitary cloth or something on top, for extra esters.

To be fair, I too am about to use the Weiss yeast in a non wheat brew - Leffe clone.

This thread could possibly do with a move to yeasties section!

Seymour, thanks, that's really interesting, I've not used any mauri yeasts yet, still a novice. I live in Manchester so I really must get hold of some Marble yeast too! People here think draught Marble has lost its sparkle, possibly since the brewery move. Not had any bottled Marble for ages.

You're right! I do drink draught Dobber in the Marble Arch and Marble Beerhouse though! And I one won a crate of 12 mixed marble bottles in a raffle. Imagine my joy!
