Golden Condor Pale Ale

Post by leedsbrew » Thu Nov 07, 2013 7:38 am

A homage to one of my all time favourite kids TV shows from when I was growing up. Hoping to get this one going next week.

1.055
1.015
5.3% ABV
Mash 66 - 68oC (haven't nailed it down yet)

Fermentables

UK Pale Ale Malt 3.403 kg 70.1 % 3.9 In Mash/Steeped
German Munich Malt 0.965 kg 19.9 % 2.0 In Mash/Steeped
UK Torrified Wheat 0.245 kg 5.0 % 0.2 In Mash/Steeped
German Caramel Pils 0.245 kg 5.0 % 0.2 In Mash/Steeped

Hops
Variety Alpha Amount IBU Form When
US Magnum 16.0 % 15 g 27.5 Loose Whole Hops All Of Boil
US El Dorado 15.8 % 40 g 14.4 Loose Whole Hops 5 Min From End
US El Dorado 15.8 % 40 g 0.0 Loose Whole Hops At turn off
US El Dorado 15.8 % 40 g 0.0 Loose Whole Hops Dry-Hopped

Yeast

Looking for a medium bodied pale ale wort to stand up to the late/dry hoping

I've only ever used El Dorado with other hops os thought I'd give it a shot centre stage!

Any thoughts?

cheers

What a great show that was - with a great theme tune CLICKY !

Not quite as good as Ulysses 31 though! :D

Nice recipe BTW.

That recipe sounds delicious. I can't wait to hear how it turns out.

My buddy Mike (pictured in my big group brewday thread) recently brewed a similar beer using Belma and El Dorado, and it was one of my favourite beers in a long time, which is saying a lot. Here he is brewing a high-grav smoked porter to be aged with bourbon-soaked woodchips.

Cheers man! The plan is to get it on this Sunday. I'm probably gonna sub the Cal V for S04 as I haven't had time to get a starter on and I have a tube of Kolsch yeast that needs starting up first (for next weeks blond ale).

Any suggestions on tweaks to the recipe? Im thinking the combination of Golden Promise, Munich I & carapils will hold up well to the heavyish late hoping so as to still maintain some balance! Still haven't decided on a mash temp. Water treatment will probably take the form of gypsum to adjust the sulphate to about 250-300 PPM

Is your Cali V old enough to need a starter? Just that I'm really not a fan of S-04 in a pale ale.

Other than that it looks good, though my standard late hopping schedule is 15,5,0. If I recall correctly the 15 minute addition is for flavour and the 5 and 0 for aroma. It's worked well for me.

I always make a starter with liquid yeast even when they are fresh, I think it's just good practise and gives them the best chance of a strong ferment.

I really like S04 fermented cool (17-18oC) in pale ales. I think it adds a nice restrained englishness!

Any update on this one at all? Did you get to brew it?

Just got a 100g of El Dorado and wondering whether to IPA/DIPA it or pale ale it to see if it works best blended or single 'op.

Not as yet fella! Not had chance to get a brew day on in a few weeks, but! The plan is to get this on on Wednesday!

I'm planning on using either a 2L starter of Kolsch yeast I've got going or the Mangrove Jack Burton Yeast as I haven't managed to get a starter of wlp051 going yet either. Haven't nailed that dow yet. Either way I think I'm going to mash at 68 to try and keep a good amount of body in the beer.

The only other time I've used them was in this

Fermentables
Ingredient Amount % MCU When
UK Lager Malt 4.303 kg 80.0 % 3.1 In Mash/Steeped
German Munich Malt 0.537 kg 10.0 % 1.0 In Mash/Steeped
German CaraAmber 0.215 kg 4.0 % 2.0 In Mash/Steeped
German Caramel Pils 0.215 kg 4.0 % 0.1 In Mash/Steeped
UK Amber Malt 0.108 kg 2.0 % 0.7 In Mash/Steeped

Hops
Variety Alpha Amount IBU Form When
US Chinook 10.5 % 15 g 20.5 Loose Whole Hops 60 Min From End
US Mosaic 12.0 % 15 g 5.6 Loose Pellet Hops 10 Min From End
US El Dorado 15.8 % 15 g 6.7 Loose Whole Hops 10 Min From End
US Cascade 4.5 % 15 g 1.9 Loose Whole Hops 10 Min From End
US Mosaic 12.0 % 15 g 4.4 Loose Pellet Hops 1 Min From End
US El Dorado 15.8 % 15 g 5.2 Loose Whole Hops 1 Min From End
US Simcoe 13.0 % 15 g 0.0 Loose Whole Hops In Fermenter
US El Dorado 15.8 % 10 g 0.0 Loose Whole Hops Dry-Hopped
US Mosaic 12.0 % 10 g 0.0 Loose Pellet Hops Dry-Hopped

Obviously there was a lot else going on but this beer had a great, dank, fruity, piney, grapefruit thing going on and I recon you could pick up the el dorado in the fruity part of all that!

Thats the main reason I want to get a beer on using just El dorado, to get a feel for the hop for other beers. I recon I'll do a similar beer with mosaic as well!

Keep me posted how it goes. I've tried a Mallison's single hop mosaic and was very impressed, a bit soft fruit flavoured, but the body of the beer was a little weak for my tastes at 4%.

Now used El Dorado twice with First Gold, works a treat.
