Saison recipe
Saison recipe
Having never brewed this beer style I was planning on giving it a go. Can anyone out there recommend a good basic saison recipe. Also any tips regarding yeast? I normally use Wyeast (mainly because my local shop usually has plenty of stocks) and see that they have a French 3711 or Belgian 3724. Cheers in advance.

I've tried a marmalade saison( on here somewhere and very nice it was too although it would be better with temp control to ramp it up.

It's all in the yeast isn't it? If you keep the colour at 15 ebc for nice orange and ibus just barely north of 30 with noble hops for aroma at 15 mins and some bitterness up front you can't go wrong.

French Saison is much easier to handle re fermentation.

I've been thinking about this too, not familiar with this beer at all. Tried one from Tesco but it was vile, cant remember the name. Maybe it was just a rubbish one. Can anyone recommended a good one to try before I consider brewing? thanks

Saison dupont is the one you want to try
Currently anything that uses either of those two yeasts is labelled a saison no matter what the ingredients, so there's a very wide range of beers being produced and called a saison

Cool, will keep my eyes open. On a stag do in Prague later this year so will be trying every single beer I can get my hands on!

Didn't think the tesco one was vile. not a great example, however It is cheap and made by marstons can't expect much I suppose. What would the malt bill look like for a saison DuPont? Would be aiming for something with a little more yeast charecter and sourness. I suppose that would mostly be down to fermentation temp so may have to hold off till I get some way to control it.

The Saison Dupont yeast can stall if temp gets low. The book Farmhouse Ales is a great resource on Saison & Biere de Garde.

Thanks I'll get on that. Will get the book ordered planning to read a lot of brewing books this summer working my way through designing great beers just now.

Saison Du Pont extract recipe 19L
.5 lb vienna (steep)
5.75 lb x-light DME
1 lb wheat DME
1 lb clear candi sugar
1.4 oz Styrian Goldings (7 AAU) 60 min
.5 oz EKG 15 min
.5 oz bitter orange peel 15 min
1 tsp irish moss 15 min
.25 oz EKG 5 minutes
AG recipe:
9.5lb pilsner
1lb Belgian wheat
1/2lb vienna
1lb clear candi sugar
1.4 oz Styrian Goldings (bittering)
1/2 oz East Kent Goldings (flavor)
1/2 oz bitter orange peel
1/4 oz East Kent Goldings (aroma)
Wyeast 3711
.5 lb vienna (steep)
