I cannot find a mild here in the US, especially not in Florida. So, I thought I would look around your forum for some ideas, hints and recipes. I hope to get to the UK next year, and want to try some of the winning milds, so I was wanting to try to make some of them here, beforehand. Thanks to Seymour and Orlando, I decided on the Oscar Wilde Mild recipe. It turned out better than I expected, for such a small beer. If I knew how to insert a picture, I would brag just a little.
Here is what the recipe was, and the resulting numbers:
WILDE ABOUT MILD
Batch size - 5.5 US gal / 20.8L
Efficiency - 70%
Boil - 85 min.
OG - 1.040
FG - 1.014
ABV - 3.4%
SRM - 16
IBUs - 14
I began with a London water profile -
85% Maris Otter
12% Crystal 10L
3% Black Patent
Mash 60 minutes @ 154°F/67.8°C
I could not get Challenger hops, so went with:
14g EKG - first wort addition
15g EKG - 30 minutes
Cooled wort to 68°F/20°C, aerated and added 1cup/23.7cl brewed coffee (per Seymour's secret hint)
Pitched 1 vial White Labs English Ale yeast (WLP002) - will use the SafAle S33 next time
Fermented at: 66°F/18.8°C for 7 days (it was done in 4 days)
Crashed to 40°F/4.4°C and kegged @ 12 psi
I have never had Mighty Oak's Oscar Wilde mild, but, this turned out very well. The coffee is evident in both the nose and the taste, but not a forward presence. Colour is a beautiful red/brown, with an off-white head of small bubbles. It is very easy to drink, and I have had multiple pints with no bad effects. My only grumble, is that it is a bit too crystaly sweet. When I brew this again, I will drop the crystal to 10%.
Now it is off to find some recipes of other winners. Brown Cow's Capt. Oates Dark Oat Mild sounds very interesting - and some that have been around for many years, like, Rudgate's Ruby mild, Hobson's mild and Thwaite's Nutty Black. Or, how about Great Orme's Welch Black? Ahhh, so many milds and so little time.

I put my fave mild on today. 5% roasted barley, 5% wheat, 7.5% flaked maize + MO pale to 1.037. 23 IBUs fuggles (subbed EKGs cos needs using up) fwh, and wlp002.

The last mild that I brewed I substituted chocolate rye for the normal pale chocolate barley and it turned out real good.
I'm just here for the beer.
