April Weissbier and Wild Cider Saison (split batch)
4.1kg Wheat malt
2.3kg Pale
WPL 300 wiessbier yeast
20g Halletau M, 15 IBU (although tasted more bitter in the sample)
I mashed with 12L of water at 44C for 20 min then added another 12L to bring it up to 62C and mashed for 60 minutes. I had brimmed the mash tun at this point.
Single batch sparge of 16 L.
Chilled to 16C which was as low as I could get.
Batch One
18 Litres at 1.054 which I liquored back to 1.05. (20L ish) and added the weissbier yeast which I’d had as a starter for a couple of days. (I wasn’t sure of the viability).
Batch Two
With 5 litres I then added 1.5L of my wild fermented Cider which is getting to the end of its fermenting. 5g of the Danstar Belle Saison yeast were pitched.
I got about 60% efficiency with this one which I guess may be due to the single batch spare (I guess) but I was running out of time.
Neither were doing much this morning but it had been cold last night.
We will see how we get on
