Post by octoscott » Tue Apr 15, 2014 12:27 pm

I've knocked together the recipe below, but i'm not sure if i'm being crazy even thinking about it. Has anyone ever tried a hefe, but in the hoppy style of an American IPA?

Is this a waste of time or could the results be pretty interesting?

I did an American/German hybrid about a year ago.
One of the best beers I ever made!

Looks great octoscott, was maybe thinking of doing one myself after trying a Weird Beard K*ntish town, lovely wheat flavour with US hops. I think they used a US-05 style yeast too. Would you not up the last addition hops or put some in at flame out for a steep? I like it hoppy though haha!

I was thinking of using Safbrew WB-06 for my wheat beer though, I always use US-05 but felt like living dangerously trying more of a wheat beer strain. I was also thinking of mixing it up a bit with some NZ pellet hops, Wakatu & Pacific Jade. Like the light citrus fruity NZ hops.

I see Morten used Moteuka with great success is his wheat beer in the link above.

Good luck and let us know ho it goes!

Smashing stuff gents. Thanks for the replies.

I might well up the dry hopping AdyG or may even have my first attempt at doing a hop tea.

Cheers

If you want to keep some of the hefe character (wheat and estery yeast) my recommendation would be restraint on the hops - German hefes can have single figure IBUs.

So I would suggest you stay under 20IBU and don't go overboard with the other additions. Trust me that it'll be plenty hoppy still with those mega hops.

I made a hoppy hefeweizen with wheat extract and using WB06 yeast here: viewtopic.php?f=24&t=57659
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

Will do. Got some now and planning to use it, heard good things about it, don't want it too strong but do want a bit of a wheat beer yeast taste.

A dry hop would be good on this I think. I normally puree leaf hops with a bit of the wort and just stir into secondary FV for 4-5 days, then put some where cool to get the hops to drop to the bottom.

Great write up there on your wheat beer, I was wondering about IBUs actually so cheers for telling me the 20IBU guide. I will go for small bittering amount maybe Magnum or Columbus as I have them in stock, then the NZ hops at flame out and dry hop the pellets. Sounds like yours was best after a couple of weeks when the hops died down a bit. Think it's important not to over hop this one, last 2 brews I've done were an APA with 500g 23l and a Red Rye with about the same! Very Hoppy :D

I suggest you try one of http://www.beersofeurope.co.uk/schneide ... isse-tap-5...
8.2% and a sh*tload of hops, if the Germans can do a hoppy weisse then I'm sure we can.

I don't think it's a stupid idea at all, I did one last year and I plan to do a couple again a little later in the year. I also used the Chico strain and was very happy with it. Since it's a wheat beer I wouldn't bother with the Irish Moss, who cares if the beer is cloudy? As I recall, I used a pretty high proportion of malted wheat and I also used some unmalted stuff just for fun (and to play up the wheat character). Since I was going for the "citrus effect" I used a bunch of Citra hops. If I remember correctly the beer I made was about 1.050 O.G. and the IBU's were calculated to be about 35-40. I did however burst the hell out of the beer and also pushed the dry hops.

This year I plan to make a wheat IPA and use the Dogfish Head hopping (Warrrior for bitterness and Amarillo/Simcoe for flavor and aroma as well as dry hopping). I have a regular AIPA just recently kegged and I double dry hopped that. If that beer comes out the way I hope it will I may double dry hop the wheat IPA as well. I also plan to make a 1.050 wheat beer but screw around with the hopping. I have both Citra and Mosaic and I am going to try for a tropical fruit/citrus kind of deal, I guess I'll see how that works out. :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

The hoppy American wheat is pretty popular over there it seems, but tends to use a neutral yeast like US-05. Here is an example from a great blogger...

A couple of years ago I had a 6.8% wheat beer with 40 some IBUs that used falconer's flight. It was pretty good
I'm just here for the beer.

Thanks for all the advice gents. I'm gonna stick with us-05 I think as I'm looking for the yeast to be pretty neutral and about 45 IBU's.

Will try this weekend or next and report back with the results.

Think they have that in my local Offie, will try and get some a bit later as 'market research' for my hoppy wheat beer.

Good luck with the brew octoscott and let us know how it goes :)

Finally got round to it on Saturday.

Image

Was aiming for 1.044 OG, but ended up with 1.038.

Used US-05 and this this afternoon it's bubbling away lovely.

Will update as it goes.
