Golden Fleece Ale
An unexpected brewday, I have formulated the following, I plan to use 2 x WB06 yeast with this....just because its there.
Extra Pale Malt 4540
Munich Malt 2700
EKG 6.6 33g 60 mins
Flyer 10.9 20g 60 mins
Saaz 3.1 30 mins 30g
Saaz 3.1 15 mins 25g
23litres...1070/1016 7.1% 45 EbU 26Ebc
This is a use it up brew, I'm guessing the wheat beer yeast will add some taste to it...I cannot make wheat beer any more as it causes me upset stomach so its going spare. I have a 66C mash on right now. What do you think, especially of the wheat beer yeast, will it be terrible?

I don't see why it shouldn't turn out OK. Looking at the spec for that yeast your main problem will be getting it to clear, which is not usually an issue with wheat beers of course.

thanks Jim! I managed 24.5 litres at about 1070. Its bubbling away nicely at 18C. I put in 10g of Irish Moss so hope that will help the clarity.

Still rockin' that Flyer, eh? I'm so jealous. Was that the last of it?
If you've got more, Flyer plays nice in later flavour and aroma stages too, and works especially well with strong yeast personalities like the Adnams twang or the Ringwood fruity/woodsy/spicy traits.

I have another 100g of flyer, was thinking of doing a light 4.5% type Traditional English ale for the summer. I guess flyer would be good for that sort of thing? Something nice in the summer evenings with a barbecue, what do you recommend? I have all the ususal ingredients. Maybe do HSB or similar replacing the goldings or fuggles with flyer?

This is drinkable now, has that wheat beer aroma but dropped completely clear, lovely amber colour, deceptive in its strength and has a golden syrup flavour which I suppose must be the WB06. I used my last 100g of flyer in a beer with the Tim Taylor malt bill and threw the last of them to dry hop. Bottled it Friday.
Gonna go back to some US IpA beers next. I've made so many strong stouts lately I have no 'sunshine' beer left!

Error! I put all the flyer in an imperial stout, the tommy Taylor grain bill was 100% sonnet...which I wish I had brewed on April 23rd, Shakespeare's birthday but missed by about a month! I think that's all the flyer gone now...bought in some big US hops to do a few of your wonderful IPAs. One of our pub restaurants here has an American lass in who loves her beers, had goose island and flying dog yesterday. A breath of fresh air and a hoppy delight both!

Goose Island and Flying Dog are two of my favourite US beers. Belhaven have the rights to producing Flying Dog beers I think, apparently they're brewing the Flying Dog beers for a local gourmet hot dog place. Which is a shame as I don't think much of Belhaven, seems an uninspired choice.micmacmoc wrote:Error!
