My recipe from a couple of weeks back below. Turned out smashing and a not overly complicated grain bill. I would think sticking to a single hop would be fine also.

Boil Time (Minutes): 60

Grain Bill
----------------
2.500 kg Pilsner (50%)
2.500 kg Wheat Malt (50%)

Hop Bill

40.0 g Hersbrucker Pellet (2.8% Alpha) @ 60 Minutes (Boil) (1.7 g/L)
20.0 g Hersbrucker Pellet (2.8% Alpha) @ 30 Minutes (Boil) (0.9 g/L)

Misc Bill

I did one v similar a while back. Think a small amount of oats is a good addition to make and I used a combination of orange and lime peel - worked out nicely. Also I didn't have an rice hulls but the mash was absolutely fine. Any noble hops would go well I would have thought.
