Coriander brew
I would like to make a coriander extract brew not sure of amount to add .also when is it best to add will 5 mins before flame out be fine . Just after a subtle flavour don't want my socks blown off ,brew size 21 litres .

30 to 40 grams of crushed coriander seed for the last 15 minutes should see you right.
That's what I usually put in a wit along with the bitter orange and pepper.

I'm an all grain guy, but all the same do your regular extract set up for a wheat/wit and then in the last 15 minutes add the following
40 grams crushed coriander seed
40 grams bitter orange peel
5 grams crushed black pepper
You will have a delight of a beer!

Im new to this, Octoscott whats the regular set up for extract? Is it just a basic golden recipe and then add? Can you post full instructions for me

Any gardeners tried using home grown Coriander seeds in a brew before? I let the stuff I grew for herb usage run away to seed, they have reached a fair size and smell amazing but it's my first year growing them and I'm not sure if I'll get them ripe this far north. No idea. Wonder if there could be anything said for adding them in their current underripe, more 'berry like' state!?

The green berries have much more flavour than the dried ones. I pick them green and store in the freezer then use them in curry recipes. I am sure that if you crush them and add during the last 15 mins of the boil they will work fine. A golden ale recipe would work just fine for this I'm sure. Sorry to say tho I'm no expert on extract brewing.cazabrew wrote:Hi
