Guys,
Ive got a few bags of random amounts of hops plus a large amount of Saison yeast ive just racked off my 4.5% Saison so thought i'd brew something this week using what i have.
I'm thinking a NTS (Not To Style) Saison..hopped up and ramped up re ABV. I'm thinking along the lines of Houlon Chouffe and a cross between this and an American IPA. Essentially not at all to style for both. Heres the recipe i have, should turn out at about 9% and hoppy but not too bitter:

20.0 g Galaxy Leaf (17% Alpha) @ 20 Minutes (Boil) (0.9 g/L)
30.0 g Cascade Leaf (6.7% Alpha) @ 7 Minutes (Boil) (1.3 g/L)
28.0 g Ahtanum Leaf (4.5% Alpha) @ 0 Minutes (Aroma) (1.2 g/L)
23.0 g Centennial Leaf (11.5% Alpha) @ 0 Minutes (Aroma) (1 g/L)
The 0 min hops will be put through my Hop Rocket before into the fermenter.

That sounds interesting and the main thing I like about Saisons is that the style is so loosely defined.

Indeed! I've never been that bothered about sticking to style definitions anyway but this one is definately quite far out for me..i thought about adding fruit and spice but think i'll just let the hops and yeast shine!

I can't vouch for the hops, although I'd love to hear how they fare.
The sugar addition looks fine. Tempted to chuck in a few oats at all?
