Hi guys, I've built a new system and want to test it out by doing a mosaic smash. I'm generally looking for ipa levels of bitterness and I generally aim for 6.4% when doing my smashes. But will aim for 5% with the efficency set a 65%, using all pale malt from birds mashing at 64-66.
I'm looking for massive hop flavour and was thinking of adding loads at 15-10-5 and 80 steep. Anyone done a mosaic smash? If so any thoughts? Any insights most welcome.

Done an extract mosaic smash and I loved it.
Mosaic is a great hop, pineapple & blackcurrant.

I've done quite a few all late additions and although you can get the bitterness you are after I've come to the conclusion that the underlying bitterness is more convincing if some of it - say 20 IBU comes from a more prolonged boil - 60m in my case. Otherwise nothing wrong with your schedule. From memory Mosaic is around 12% AA, which makes the 15m addition problematic when you are trying to put loads in! You need to play around with a calculator but I always end up reducing or ommiting the 15m stage in order to keep the overall bitterness down. Even if you cut the bittering stage, it still doesnt leave much room for manoever at 15m.
Finally I have used Mosaic and found it tends more to the earthy side as opposed to the citrus side of the aroma spectrum

Thanks guys. I've never heard it described as earthy. Tropical fruit and tutti fruiti?

some descritions are often of stone fruits, which I alawys assume to be things like plum and damson - slowes that kinda stuff, so by earthy I suppose what I mean is a denser as opposed to floral aroma and flavour. That probably dioesnt help much either! Just brew it, when you kegg it if the aroma isn't what you expect dry hop the jkeg with citra!

I'M gonna dry hop the life outta this one as part of the course. I will be sticking some in a cask too and will be dry hoping in the cask
