All English Pale

Ive been wanting to brew an all English pale for a while. Ive got the following hops available:-

Northdown, Progress, Admiral, Goldings and a bit of Challenger.

Ive never used Admiral but read that its orangy and resinous but hash for bittering but can be nice late in the boil

So for 80 litres

13kg of Pale Malt
1kg of wheat malt
1kg of munich but maybe crystal

aiming for 1045 og

not sure but hopped to about 35IBU

using my "Special Yeast"...It attenuates to 77% and is a clean fermenting yeast bringing hops and malt forward..Currently its in a starter and chugging away merrily

Typo...
Harsh for bittering...the description says that its "aggressive" for bittering

I've just bought some admiral hops. I've read around the web and they do seem to be used primarily for bittering. Seems the aroma is pleasant but not strong. But I'm in the same boat as you sorry. Wondering how best to use them. I'm sure they were bred to provide alpha acids for big breweries. Looking for the positives:

Charles Faram website says...

"Very good high alpha hop that will be mainly used as a replacement for Target in extracts and pellets where bitterness value is the main consideration. Not as harsh as Target in terms of quality of bitterness and has a very pleasant hoppy character."

Adnams makes a red ale with Admiral as the only hop...uh

"So English Red is a single hop beer brewed with English grown Admiral hops. The base of the beer is Pale Ale, Vienna, Münich and Cara malts with a little black malt. That gives the beer a good solid malt base with subtle toffee notes and a nice red colour. The Admiral hops are one of the most resinous and aromatic UK hops, it gives us lots of orange peel aromas with some grassy and herbal notes. We’re using the hops at 3 stages in the brew to bring out as much of it’s character as we can."

I like Admiral as a bittering hop. A lot nicer then target.
