Apollo & Citra?

Post by Monkeybrew » Wed Oct 01, 2014 11:19 am

I've been given a Woodfordes Sundew FOC from a colleague who got lazy with his brewing and gave up!

I've previously brewed the Sundew kit with extra DME and plenty of Citra (boiled, steeped and dry hopped) with good results.

I'm thinking of using Apollo in a 5 min boil and more in a steep to make a potent hop tea, and then dry hopping with Citra.

Any thoughts on this hop pairing?

Cheers

I've done this twice - the first time I bittered with Apollo and added 150g Citra late. It was a great beer but I find the addition of Apollo as a bittering hop can be slightly harsh initially, though the flavour did mellow out after 6 weeks or so. The second time I added both Citra and Apollo late and that worked quite well too. I think your suggestion of keeping the Apollo as a flavour/ aroma addition is a good one and they do pair quite well. Were I to remake this beer I would keep the Apollo at about 20 - 30% of the total late hop bill so as to enhance and not overpower the Citra.

Make mine another vote for all of killer's points. Happy brewing.

P.S. You didn't wanna age that extract another 17 years, though? :)
