here is the plan for the last Christmas brew for this year.
I already have Scrooges revenge that is an 11.2% barley wine brewed in February. This was dry hopped on a load of medium roated oak chips that had been in congac for 14 days prior to being sunk into the FV.
I also have a spiced ale that I brewed a short while ago and that is occupying the fermenting fridge in order to carbonate. this is at 7.4% ( I did take pics, but a mate and I got stuck into the kegs whilst brewing and well I sort of forgot to take enough pics after the mash!)
And so, come this years last one. Evil Santa.
Fermentables
88.8% Pale malt
1.1% black
5.6 % dark crystal ( 400 ebc)
4.5 % terrified wheat
Hops
30 IBU challenger @ 60
4,2 ibu goldings@ 10
irish ale yeast
This should come out at somewhere in the region of 1.069 and finish somewhere around 1.017 so about 6.8% ( based on 80 % efficiency)
It will have just enough conditioning time before getting amongst it:)
