2 cans Coopers Amber malt
I kg Muntons Enhancer
To be honest cant remember the yeast doh!
to 25 litres
50 g of wild hop that were given to me in Aldershot boiled for about 30 mins
20g of Challenger boiled for 10 mins
20g Willamete boiled for a further 10 mins
Temperature was a little high for my liking just over 30C, didnt watch it enough I am affraid to say, room temp is a fair steady 19-20 C, the house is warm and no heating yet for us.
Water in Essex is pretty hard with carbonate I am not adjusting it at all.
Fermented for 6 days from 1054 SG to 1018 then dry hopped with 25 g Columbus in a bag after a 10 min soak in boiling water then finned with Wilkos finnings, a little early but I am hoping to keg it off on Monday as I am away in Scotland after that for a few days
After 8 days dry hopped with 25g of Apollo in a bag again soaked in boiling water for 10 mins.
Now thinking of added another 25g of apollo to the keg, any views on that anyone? Will be a draft for supping this one!
Just about reached the end of my Wherry Nelsons Revenge even though I dry hopped it whith 25g Challenger plus another 25g boiled for 20 mins or so initially the end result wasnt as hoppy as I hoped.
My second brew is Bulldogs Evil Dog again with some added hops dry hopped 25g Challenger then 25g Columbus for good measure, still lacking a bit of hard bite before it was bottled last week - all bottled with an ABV of 7% ish so looking foward to that at Christmas

I am pretty limited these days on pan size for boiling so I use an old pressure cooker without pressure on a steady heat to a minimum wisp of steam escaping.
Just calculated the IBU and basically I may have underestimate the wild hopes a little on alpha acid overall I estimate 40 units maybe next time just Challenger at the initial boil then Willimette and Goldings plus say Apollo in the last stages for a short boil of 10 mins.
