What is your favourite Brown Ale recipe?

Post by seymour » Fri Nov 21, 2014 10:41 pm

My question is that simple:

What is your favourite Brown Ale recipe? Tips, tricks, things to avoid? Is there a best way to dispense it?

Cheers!

I love Cumbrian double brown. Only change I make is to add dark candi sugar instead of corn sugar.

One vote for:
Northern Brewer Cumbrian Double Brown Ale
OG: 1060
ABV: 6.6%
Grainbill: 69.5% Maris Otter, 11.5% Amber Malt, 3% Crystal Malt, 3% Dark Crystal Malt, 3% Pale Chocolate Malt, 10% Dark Candi Sugar
Hops: Fuggles or Willamette (60 min)
IBU: 18
Colour: brown
Yeast: Wyeast 1026 "British Cask Ale", probably a Whitbread-B (dry) equivalent from Thwaites/Shepherd Neame, possibly related to Brewlab Kent, S-04, WLP007, Wyeast 1098, BSI A-98 & BSI-7

Good timing Seymour I am planning to brew an american brown next week and a maple and pecan brown.

Planning to use jamil american brown recipe as the base for both, but hopefully will get some inspiration from this thread.

When I brewed it last time, I did two thirds american brown and the remaining third the base without the american hops. The american brown sadly got infected but the third without the aroma hops is yummy!

Planning to stop brewing milds and do browns instead as they have a bit more malty goodness going on.

This brew I did a year ago was based on Dark Island's grain bill with extra crystal and was fabulous. I tried to decide what styleit was and ssettled on brown ale, rightly or wrongly..

Batch Size (L): 12.0
Original Gravity (OG): 1.047
Final Gravity (FG): 1.011
Alcohol by Volume (ABV): 4.76 %
Colour (SRM): 19.5 (EBC): 38.4
Bitterness (IBU): 30.8 (Average)

1.839 kg Maris Otter Malt (78.99%)
0.140 kg Brown Sugar, Liguht (6.01%)
0.140 kg Crystal 40 (6.01%)
0.116 kg Wheat Malt (4.98%)
0.093 kg Chocolate (3.99%)

7.0 g Aurora Leaf (9.3% Alpha) @ 60 Minutes (Boil) (0.6 g/L)
7.0 g Aurora Leaf (9.3% Alpha) @ 15 Minutes (Boil) (0.6 g/L)
7.0 g Centennial Leaf (13.5% Alpha) @ 15 Minutes (Boil) (0.6 g/L)
7.0 g Centennial Leaf (13.5% Alpha) @ 5 Minutes (Boil) (0.6 g/L)

This turned out really nice, although left some family members very drunk as you can't tell it's fairly strong. Janet's Brown Ale ImageImage
