Ideas for these hops?

Post by marcarm » Wed Nov 26, 2014 11:24 pm

I visited my local brewery yesterday and walked out with 100g of each of these hops:

Hops_Motueka
Hops - Czech Kazbek
Hops - UK Boadicea
Hops - UK Pheonix
Hops - US Cluster
Hops - US Crystal
Hops - US Chinook
Hops - UK Fuggles
Hops - UK Archer

Just wondering how I can make best use of them. I would like to make something Ghost Shippy, I think I read somewhere they use Motueka hops so that was the main reason for getting those. I'm quite new to recipe design, only making 2 beers that I have designed myself (and one of them was a SMASH with Apollo so not much thought required there!), so thought I'd put this out there to the more experienced among us.

Grains are not a problem, I have a few different varieties and any that I need I can get from the LHBS.

I do prefer a hoppy beer over a malty beer, favourites in the past are speckled hen, abbot ale, and of course ghost ship. Also looking for something about 4.5% over a 21l batch size.

Forgot to say I have some adnams yeast that I got from a cask of ghost ship, so will be using that on the next brew.

TIA :D

If you enjoyed the way your Apollo SMASH turned out, simply repeat for other single hops to compare and contrast. Many people will add about 5% Munich, Crystal, CaraPils, CaraMalt, etc, just for a little extra grain complexity, but it's all up to you.

I highly recommend a single-hop brew for your Crystal hops. Those are really, really unique and flavourful, one of the most overlooked and under-appreciated US hops, in my opinion. Intense citrus, but not that familiar English marmalade essence, and not that familiar American grapefruit essence, it's a really cool sweet-orange flavour like tangerines, clementines, navals, etc.
