Hi, has anyone got a tried and tested ris recipe, want to do one to keep for next Xmas. Got most of ingredients, not a high alcohol yeast tho, if I pich 2 sachets of Nottingham, do you think that would work?

Ok I might make an ipa instead then and pitch on to slurryMatt12398 wrote:I think Nottingham will handle high ABV but ideally you want to use a pitching rate calculator. I think 2 packets would be a bit short.

Re: RIS
I've made Jamil Zainasheff's RIS from Brewing Classic Styles for the last two years. Made in January for Christmas drinking.
I used 2 sachets of Nottingham both times. First time finished a couple of points lower (1024 to this year's 1026) and was a much nicer beer, just had the last bottle of the Jan 2013 batch on Christmas Day.
