Hi, has anyone got a tried and tested ris recipe, want to do one to keep for next Xmas. Got most of ingredients, not a high alcohol yeast tho, if I pich 2 sachets of Nottingham, do you think that would work?
no palate, no patience.

I think Nottingham will handle high ABV but ideally you want to use a pitching rate calculator. I think 2 packets would be a bit short.

Ok I might make an ipa instead then and pitch on to slurry

I've made Jamil Zainasheff's RIS from Brewing Classic Styles for the last two years. Made in January for Christmas drinking.

I used 2 sachets of Nottingham both times. First time finished a couple of points lower (1024 to this year's 1026) and was a much nicer beer, just had the last bottle of the Jan 2013 batch on Christmas Day.
