Hi, this has caught my attention. I might give it a shot but with a more conventional hopping regime - so probably wont be like Liquid Mistress but its the malt profile I am attracted to. Will aim for about 30ibu and no dry hopping. A quick question for you - what yeast did you use?

Had a cheeky QA taster of the brew yesterday out of the conditioning barrel. Bloomin' gorgeous I'm dry hopping in two stages for 7 days at a time and this is midway through stage 1.

I also brewed this last weekend - OG was bang on. I use Mangrove Jack workhorse and it seemed to start out aggressively but stopped after about 48 hr. This does not worry me unduly. I will take it off the yeast this weekend for a weeks conditioning and dry hopping and will test FG and taste it. Will report back.

Centennial to about 45ibu - cant remember exact quantities but included good amount at the end. I will dry hop with whatever I can find in my box which might be suitable - think I have some Nelson S which might go well.

Didn't bother dry hopping. at bottling I was not holding out too much hope - seemed too sickly/sweet.....but tried my first bottle last night and even though its early days was very pleased with the result. Superbly rich malt profile balanced by excellent bitterness from the Centennial. Would probably mash slightly lower temp next time and use different yeast - maybe even a dual top and bottom yeast.

A postscript to this - I seem to have some gushers on my hands. Not surprising with all the complex unfermented sugars present I guess.
