American Pale.- whats your thoughts

Here is a hoppy recipe for your input..

I am aiming for an APA along the lines of Proper Job (Still one of my go to bottled beers). So aiming for:-

OG 1054
FG 1013
ABV 5.3%
Colour 6.1

For 70 litres:-

15.5Kg of Maris Otter
1.5kg of Wheat malt

60 mins Mash @ 67 degrees
60 min boil

Hops
Centennial 11.0% AA 60gms 25 mins
Chinook 13.4% AA 60gms 25 mins
Centinnial 11.00% AA 60 gms 5 mins
Chinook 13.4%AA 60gms 5 mins
Centinnial 11.00AA 40gms 0mins
Cascade 6.0AA 50 gms 0 mins

Steep for 20 mins to 80 degrees then chill

Yeast....Proper Brewery top fermenting yeast (origins unknown) 75% attenuation

Cocked up but saved it..
I looked in brewshed to find I had only 10kg of maris otter open so thought that Id change it a bit to a 50 litre brew

the plan was going really well until I was rudely interupted by a very persistant rep from a supplier (For my day job)..
As I was in the middle of sparging at the time, my eye taken off the job in hand I noticed that suddenly I had 75 litres in the boiler..

So I either boil off 15 litres or so or rapid rethink....

I boiled off for a hour changed the hops down a bit...Now I have a very hoppy 3.8% session ale..31IBU with Chinook and Centennial. ...
Smells amazing

Good save. The current fad here in the States seems to be "Session IPAs": low alc., but nicely hoppy.
I'm just here for the beer.
