I recently got a new freezer, and used it as a chance to consolidate my 3 freezers into 2, Using up lots of food that had been in there too long. Alas, it seems somewhere along the line I've picked up Obsessive Compulsive Hop Acquisition Syndrome. Now I've got all the hops in one place, I have 2 whole freezer draws just full of hops...

I think this calls for a hop bomb.

I've not gone through and worked out what hops are in there, or in which quantities yet. But I know there to be Amarillo, Citra, EKG, Saaz and Perle.

Does anyone have any advice on formulating recipes for heavily hopped beers? Any recommendations on yeast?

I agree. Use enough Perle in the full boil to set your desired bitterness, Saaz at 15 min remaining for a subtle black pepper spice and perfumey note, then loads of everything else near end of boil and dry hop additions.
