Re: Build me a mild
I'll start this post by announcing that I know sweet fa about milds as it's not really a drink I'm familiar with, but looking at your ingredients list I'd have thought a bitter or a stout or porter would be your best bet, don't you need mild malt to make a mild?
Maybe stick with your grain bill, perhaps chuck in the Vienna as well if you want to get the gravity up a bit, I don't know what the AA% of the Admiral is or what IBU's your aiming for but I'm sure you could get more Bramling x in there both early, late and dry hop.

Re: Build me a mild
I'm with Bazz with the hops. Must be worth sticking your Bramlings in at the start too.
I've never used chocolate malt with dark crysta so I'd like to see how that works. I know you could used roast barley instead such would give you a heavier, more liquorice flavor , if that floats ya boat.

Re: Build me a mild
I could drop the admiral and sail it as a single hop beer like 50g of brambling x at 90 min
Re: Build me a mild
This chap's recipes have worked well for me, you could maybe adapt this?

Re: Build me a mild
If you really need to make a dent in that bramling x then how about hop bursting with just that? ie. no bittering addition just loads in the last 15 mins.

Re: Build me a mild
I'm not sure if I want a complete hop bomb
Re: Build me a mild
your recipe looks good maybe throw in a bit of roast barley as well - seems to help head retention. 50g of bramling X for 90 mins sounds good for a mild.
Re: Build me a mild
It looks good to me although you could mash at 69 just to be brave.

Re: Build me a mild
Agreed... but you have Willamette which can sub for Fuggle and if you tweak up the choc malt you're home and dry.
Re: Build me a mild
Most mild ales do not have lots of late hops and are certainly not "hop bombs". If you are wanting a mild I would suggest that you steer clear of loads of late hops, dry hopping would not usually be considered for a mild either.
your original recipe does not look at all bad to me. (I'm no expert though). Most milds are low in abv and have the hops usually as a first addition.
You could use 40g of the Bramling X as a bittering hop with maybe 20g going in at 10 mins, that would make a small dent in the 900g that you have.
Mild ale malt is not necessarily a requirement for a mild though you could reduce some of that dark crystal and replace it with chocolate malt instead.
The ball is well and truly in your court.
