user up recipe advice

Hi all, been mostly doing english style ale,s of late and now fancy doing a couple of american style i.p.a's or amber and do quite like a brown. Been doing biab for just over a year, usually clones, tho have swapped hops for similar but not designed recipes. Have half an idea for grain percentage and hop I.B.U's.So just wondering if anyone can come up with something to use up some open bags of hops and grains. A sort of american/ english ale cross.Hope this isn't too vague. So here's a list of what i got.Malts; Golden promise. Cara Munich1, 500g. Crstal150, about 700g. .Amber 1kg. Haven't used Munich before.Hops(opened) . Perle 50g ish. Chalenger50g ish. Northdown 80 g . Goldings(bobek) 80g. e. k g. 80g. Hops(unopened) 100g each. Cascade(2) .Centennial . Chalenger. Fuggles . Nugget. Target. Warrior.Have looked at doing a goose island ish clone with the the crystal, amber and using the Goldings , Cascade,Fuggles and Centennial. Also haven't used Nugget before.Thanks,Dave.

If this helps, my kettle could probably do up to 30l and if i tried for say 5.5% to 6% ale with an o.g of 1.060 maybe,would require a total grain bill of 9500g ish . 23l batch 7250g. does that sound about right?thanks, dave

What about the golden promise and amber malts, challenger for bittering and one of the yank hops for aroma.

Thanks Dennis. So maybe looking at 90% pale, and 5% each of munich and amber/ melanoidin(just found) or up the munich and amber?.Then challenger at 60min and a mix of cascade and centennial at 15/ 10 min and 0.Sqeeze some goldings in somewhere maybe.I'll mess about with the maths for grain bill and i.b.u's tomorrow when i've got a bit more time. Maybe 3-5% amber. Not more. You can't go wrong with Centennial.

O.k. Thinking, keep it simple. Couldn't see the wood for the tree's for a minute .So how's this sound?.Roughly,Doggy Style Classic Pale Ale from clone brews book but upped the i.b.u's and swapped northern brewer for challenger.
23l batch.o.g 1.058 so 5 to 5.5% ish
golden promise 6000g
crystal 600g
challenger leaf 30g at 90 or 60 minute
cascade 15g at 15 min
centennial 25g at15min
cascade15g at 2 min
centennial 25g at 2 min. i.b.u's 50.
Quite like Cascade but in a few 'craft' bottled beers i've had, there's this dry after taste. Would that be because they've hammered it at the start or end of boil.I could up the centennial.
Also, would that be too high i.b.u's for a pale or would the late additions carry it?Thanks,Dave

For my money I would not bother with the 2 minute hops, leave them for a steep at <80c, better still keep them for a dry hop at the end of fermentation, you always get more aroma per gram that way. If you care about the difference this will give to the bitterness adjust the 90/60 addition.

The only time i've done late additions was a 60minute i.p.a. Which was every 5 minutes from 30.Most have been, start , then 15/10 min, then maybe 0. At 0, as you say, usually put the chiller on for 10minutes then bung in. The recipe does say , i think 28g of cascade dry hop.Had a couple of sanitation issues in the past and am a bit scared of dry hopping so may look into a hop tea.Thanks, Dave

Revised maths.Put in originally for 1.050. So adjusted to 1.055. 60minute boil.
So grain bill up to 6900
Challenger up to 42g At start, others up to 35g and 15g at 15 minutes.
The 35g and 15g 2 minute addition moved to 0 minutes.or 80c.
25g dry hop/hop tea
i.b.u's 42
sound alright?

Nothing in the last 100 + years has changed regarding dry hopping, I think you will be all right. :D
