English Pale Ale...
I’ve been asked by a good friend to brew a beer for his wedding favours.
Wanted to keep the cost down, so thinking of making an English pale ale and showcasing what great hops we have. I usually brew with American or New Zealand hops so haven’t had much experience using East Kent Goldings.
This is what I’ve come up with:
Recipe Overview
ABV: 5.1%
Original Gravity (OG): 1.057
IBU's (Tinseth): 35
Bitterness to Gravity Ratio: 0.61
Colour: 19.7 EBC = 10 SRM
The Grain Bill (Also includes extracts, sugars and adjuncts)
86.2% Crisp Pale Malt (5.7 EBC = 2.9 SRM) 5808 grams = 12.81 pounds
7.5% Crystal Malt (120 EBC = 60.9 SRM) 503 grams = 1.11 pounds
3.4% Amber Malt (50 EBC = 25.4 SRM) 232 grams = 0.51 pounds
2.9% Torrified Wheat (4 EBC = 2 SRM) 194 grams = 0.43 pounds
The Hop Bill (Based on Tinseth Formula)
23.2 IBU East Kent Golding Flowers (5.5%AA) 54.6 grams = 1.926 ounces at 60 mins
4.9 IBU East Kent Golding Flowers (5.5%AA) 14.9 grams = 0.525 ounces at 30 mins
6.9 IBU East Kent Golding Flowers (5.5%AA) 44.7 grams = 1.576 ounces at 10 mins
0 IBU East Kent Golding Flowers (5.5%AA) 9.9 grams = 0.35 ounces at 0 mins
0 IBU East Kent Golding Flowers (5.5%AA) 19.9 grams = 0.7 ounces at 0 mins (Dry Hopped)

What do we think? Will WLP023 be okay for this style and should I pair anything with EKG?

Personally I like pairing Northdown with EKG, works for me. Never used WLP023.

EKG with challenger is lovely!!! i would use wlp002 or for a bigger atenuation and clean fermentation wlp007! Personally, i would go down with the crystal to 5% max and remove the 30 minuts adtition and put one at 15 minuts!! and you should increase the IBUs, cause with a OG 1057 and estimated ABV 5,1%, gives a FG of 1017, wich is to high (for me)!!

For my personal taste, assuming you're brewing around 25l I would leave out the amber malt or reduce it. Also, I would reduce the crystal and stick with Goldings. WLP 002 will be perfect.

What hops you limited to windrider ? I can suggest a cheap easy drinking 3.9% pale that I'm on my second batch and everyone loves

It's all about personal preference. 3% amber sounds good to me, but I'd cut the crystal to 5%. I wouldn't buy Challenger just to bitter, I'd use some later too, it'll complement the EKG well. If you use WLP002 you need to control the temperature in my fairly limited experience, and you may need to keep it in the FV a while to reduce diacetyl. But it'll make a great ale.

I’ve made some slight tweaks to the recipe. I’m going to stick with the below grain bill as it’s very similar to an IPA I brewed last year which came out well. I might skip the dry hop addition depending how it tastes when it comes to it…

I have found WLP023 to be a lovely yeast but a bugger to clear.

Cheers. I've done various things and I like them both late together.
