I've got a load of Summit in the freezer so I knocked up this session pale. Anyone brewed with 100% Summit?

Oh I forgot to mention, I fancy mixing it up with a Belgian yeast, sort of white IPA style.
Do you think I should mash high to balance the dry yeast if I used a Belgian strain?

Replied on the other forum as well! Summit is a predominantly bittering hop? High alpha acid would suggest so any way. Not sure how much taste you would get using it as late addition/dry hop. Personally, I would keep the mash temp the same, I have in Saisons etc and the yeast is still a predominant flavour.

I've used summit for bittering and flavour in a beer that had other flavour hops. I won't bitter with it again, there are better bittering hops IMO. Might use it for flavour.

I've not used Falconers Flight! But it sounds like great blend, and a good idea to me.
