Spring Brewalong Recipe Discussion - Summer Quaffer

So here we are, ready to put our summer quaffer recipe together.

As a starting point, we could use a Summer Lighting clone (as already suggested in the main discussion thread). There's a clone recipe in Brew Your Own British Real Ale that we could start from (which also has an extract equivalent). It's an all pale malt wort with Challenger bittering and Golding late hops, OG about 49.

Would a hop choice be possibility, or would it be against the spirit of everyone brewing the same thing? I'm thinking two choices, a Goldings/Challenger option or a Centennial/Cascade option. I might do a split boil.

The popular Centennial Blonde recipe is Centennial and Cascade and has pale malt, Carapils, Crystal and Vienna. Would we want to add any of these malts to the base malt?

I'm imagining it'll be 4% ish.

I think that we should all brew the same recipe, but do agree that the standard Summer Lightening hopping should be modernised a little, also I would have thought that the finished beer would be nearer to 5% with an OG of 1.049.

Base malts should be kept fairly simple to keep the appeal there for all types of brewers (AG, Extract & Kit) IMO.

I would go lower than 5%, to stay within the wider quaffing remit.

Maybe 4.5%. How about pale malt and pale/medium crystal or caramalt. Which can be steeped by extract and kit brewers.

I agree - nearly 5% is hardly a quaffer.

Something nearer 4% would be better imo.

and which yeast are you thinking to use???
why not pale malt with a bit of torrified wheat or wheat malt??

When I brewed Grahams recipe several years back the bottle version was bottle conditioned. Capturing that yeast made a big difference and was one of the closes clones I have brewed. Not sure if they are still bottle conditioned.

I reckon it either needs to be a widely available yeast, probably dry, to keep as many people as possible on board, or a free choice of yeast.

I'd love to hear about people's recent experience of using the Hopback Yeast. I used to love it, but then I did a couple of brews with it and was underwhelmed by the result. I couldn't help wondering if they'd switched to a bottling yeast.

That is why I stated it was several years ago I used the yeast. For many years the only yeast I would use was from bottles of white shield but they changed the bottling yeast a while back with a big difference.

I understood the vote was for a quaffer in the style of Summer Lightning, not actual Summer Lightning?

Could we mix American and English hops maybe? Bit of a twist to add interest? Centennial plus EKG? Or Challenger or First gold?

Absolutely - it's all up for grabs. I'm just used SL as a starting point.

I'm going for 4.5% all pale malt with challenger all the way, with plenty of late additions, simple stuff, maris otter or pale malt, my main consideration is what yeast?
