Fruit Punch Beer (Extract)

I've enjoyed the fruit salad penny sweet flavour of my ColAmMo (viewtopic.php?f=24&t=75103), so I thought I would try to go a bit further into fruitiness. I've got this planned for Sunday, but I'm still tweaking the recipe (14 litre batch):

Fermentables:
1.5kg light LME
0.3kg extra light DME
0.3kg CaraRed (50 EBC)
0.2kg Light Crystal (80EBC)
Should give me around 4% ABV

Hops:
15 mins: 15g 2012 Topaz (12.5%AA - adjusted by minus 5% from 17.5% for age) - 14.3 IBU
15 mins: 15g 2015 Mosaic (11.8%AA) - 13.6 IBU
15 mins: 15g 2015 Húll Melon (6.7%AA) - 8.2 IBU
0 mins: 25g 2012 Topaz
0 mins: 25g 2015 Mosaic
0 mins: 25g 2015 Húll Melon
Dry hops: 20g 2012 Topaz
Dry hops: 20g 2015 Mosaic (11.8%AA)
Dry hops: 30g 2015 Húll Melon (6.4%AA)

Lychee, tropical fruit, melon with a hint of strawberry... madness :D :shock: :D

I can't decide whether to add to the silliness with S04, or even Fermentis Abbaye yeast, or whether to keep it clean for the hops with S05/standard with Nottingham. What would you do?

Mind you, a saison yeast could be good! Depends what you're after. Split the batch perhaps?

I thought S04 was a fairly clean yeast.

Fairly clean, but fruitier than Notts, and S05 is supposed to be cleaner than both (I haven't used S05 yet).

I have S04, S05, GV12 (Nottingham) and Lallemande/Danstar Abbaye (not Fermentis) in stock.

I can't be faffed with splitting the batch, but I could be tempted by mixing strains...S04/S05 mix? Notts/Abbaye? Whatever I use will be reused for the next couple of brews, which are likely to be another canoe beer and a "Black IPA" (for want of a better beer style name). Possibly a single hop brew after that. Based on those, maybe clean will be best, and let the fruity hops do the talking.

Or I'll do a lucky dip from the fridge door after the boil has finished :lol:

Transferring - nice and clear, but the filter soon blocked :( It doesn't seem to like it when I get a good amount of break material, so I need to stir it, and the break transfers anyway... I may need a wider mesh.

I've gone with US05, mainly because I haven't used it yet :lol: Given the age of the Topaz, I may skip them on the dry hop and go with 30g each of Melon & Mosaic
