Wheat wine Ale.

OK , so I've been toying with the idea of doing a barley wine type brew but using wheat instead.

Surfed the net a heap and found that the yanks are and have done some stuff in this realm.The alstrom brothers "Triticus ale" is what peaked my interest.

My twist is to do a 100% wheat malt( no barley) version with a single hop variety as well.Doing a 100% wheat beer holds no fear for me as I've done a weizen and a 98%(wheat) dunkleweizen in the past.Mash thin and sparge slow is the mantra.

Aiming for 11% alc with a nice pale colour.50 Ibu is my plan at the moment with a neutral yeast like US05 or Nottingham.

Could either go an overt hop like ammarillo or NZ B,D saaz for fruitiness, or opt for a tetnanger, Hallertau character.

Interested to hear others thought s on IBU's for a beer this big and what hop variety yeast options you'd think.

Only planning a 10 litre brew that can be bottled into 375 ml and tasted over a couple of years on a monthly basis.

i'll post my final recipe in this thread when done and see if anyone else is keen to give it a go with the view to posting tasting notes experiences into the future.

100% wheat...hardcore.

In a recent Jamil podcast he suggested using a Kolsch yeast in an American wheat. I guess in that case you'd still be getting a 'mit Hefe' wheat beer but without the esters.

Amarillo would be quite nice but it might be all you taste. Depends if you want American character or more classic European flavour. Today I'd err on the side of Hallertau but tomorrow I might change my mind!

Depends if you're going Yank or European. I'd go around 30-40 for a European and more for an American style beer.
