Holy s**t! How long before Xmas!

Now, I'm not totally unprepared, i did a gallon of 8.5 strong spiced scotch ale this January for this Xmas, but i usually do a porter or IPA or something for xmas and i may have left too late (working away next week so can't do it until week after next). So, what recipes have you done for a quick turn around? A hefeweizen maybe? Time is also of the essence so I'm looking at using DME or subverting a kit?

I've got one in the FV and I'm still worried that it wont be at it's best I should have done it sooner :(

Greg Hughes Patersbiere is a quick n tasty dme brew and would be ready well in time. Did it for last Christmas...

If you are looking for a BIG beer time is tight but if you are just after a tasty 3-4% session Ale there's plenty of time, I can bang out a sub 4% in 2 weeks

A stout around 4% its done in 25days, you cant go wrong!

70% pale
20% flaked barley
10% roasted barley

OG: 1043
IBU: 35

good luck, i know the feeling, but this year i have some things for christmas, a Robust porter, a Extra stout, a kolsh and an APA :)
Planning: Raspberry Witbier, , Bitter, Porter
FV1: BIAB#54 CHRISTMAS Porter
FV2:
FV3:
keg1: BIAB#49 Kölsh
keg2: Robust Porter
Keg3: Saison
Keg4: Best Bitter
bottled and conditioning: Extra-stout, Blonde ale, APA and Smoked Porter

I need to bang one out....... Before xmass... Not realy sure what sort will go down well, I'm guessing a biggish one , and it needs to be dark & silky smooth.
Any suggestions??

Never heard of Patersbiere (#googles it), oh i like the look of that, whats your recipe BenB? What yeast? I've got wlp565 dregs in the fridge?

I think a pale should do it, when you mean exotic, what do you have in mind?

Maybe ambitious and out of left field but a new England ipa.
This style should be cloudy and fresh it's brew to glass in 2 weeks.

Anything high gravity 6%> or requires lagering.

I've already got my Xmas beers done, but I will be making one or two IPAs for Xmas this week. Probably tomorrow and maybe Wednesday. It should be fine. Steep lots of hops at 80*C, instead of dry hopping. Pitch slightly more high floccing yeast, that are very healthy. Rack to a secondary after about 5 days, when approaching FG. Leave it for a couple of weeks. Keg and chill over night. Add gelatine and carb using carb lid/carb stone. Enjoy! 8)
