helles/golden.....ale

Post by rui » Wed May 17, 2017 3:02 pm

helloo from a sunny and warm Portugal 8)
Saturday i had a chance to brew, and still use the spring temperatures for a nice and clean fermentation.
This time i was brewing something light and refreshing, a kind of a munich helles but bitter and with an ale yeast.

here's the recipe:

Recipe Specs
----------------
Batch Size (L): 17.6
Total Grain (kg): 4.285
Total Hops (g): 35.00
Original Gravity (OG): 1.054 (°P): 13.3
Final Gravity (FG): 1.014 (°P): 3.6
Alcohol by Volume (ABV): 5.31 %
Colour (SRM): 4.8 (EBC): 9.4
Bitterness (IBU): 36.7 (Average)
Brewhouse Efficiency (%): 72
Boil Time (Minutes): 75

Grain Bill
----------------
3.900 kg Pilsner (91.02%)
0.225 kg Melanoidin light (5.25%)
0.120 kg Carapils (Dextrine) (2.8%)
0.040 kg Acidulated Malt (0.93%)

Hop Bill
----------------
20.0 g Magnum Pellet (10.5% Alpha) @ 75 Minutes (Boil) (1.1 g/L)
15.0 g Columbus Pellet (10% Alpha) @ 1 Minutes (Boil) (0.9 g/L)

Misc Bill
----------------

Single step Infusion at 67°C for 120 Minutes.
Fermented at 18°C with Safeale S-04

the day went well, just two things unexpected.....1.5l less beer in the fermenter, but i saw my efficiency rising 5%, which is good... because was dropping some months ag, in previous brews. But i cameback to basics and tried to understand why it happened....but the last three brews things realy worked fine.

Finishing with a tasting of two previous brews, a SMASH vienna and cascade (citrus, orange, blood orange and some breadiness) and a stout (coffee and dark chocolate)

Rui, looks great!

Can anyone tell me what it is that you have over the fv when letting the wort run in. I have so much trub in my beers at the moment that I need a filter like that.

How do you I clean/sanitise it?

Thanks

its a kind of fabric that I use as BIAB or in this case as filter.....i do not chill.....so the beer its hot enough that i dont have problems with it.....I never had an infected beer, and like this i dont have much trub in FV!!
