Hullo,
I was in Aldi yesterday and they have a ton of rhubarb on special seeing as it’s in season. Got me pondering the idea of a rhubarb and ginger beer.
For a gallon demijohn I was thinking something like
200g root ginger
200g rhubarb
200g brown sugar
1 lemon (zested and sliced up, all thrown in the jug)
I have a packet of cider yeast in the cupboard so probably just use that.
Then after a couple weeks, rack it and add in 200g maltodextrin for sweetness (anyone noticing a pattern?)
All just guesswork in terms of ingredients and amounts. Probs can’t go all that wrong....

Was just going to fill the gallon jug up with water. Just over 4L will give me about 12 wee bottles, I suppose.

After a bit more research and googling....I ended up just winging it with this rhubarb ginger beer last night.
In the end I went with
250g ginger
250g rhubarb
250g brown sugar
300g white sugar
(I’ve just realised now that I’ve forgotten the lemon! With the tartness of the rhubarb I doubt it’ll be needed. I’ll wait and see. Might add it in after racking)
I peeled the ginger and the rhubarb and put them through the food processor, so they’re all ground up into mush.
I made a wee yeast starter with a spoon of nutrient too.
It was bubbling away quite the thing when I got up this morning!

would have made a nice cider if you'd used apple juice instead of water - however it might be alright. possibly it'll be on the thin/watery side.
previously I've done rhubarb and ginger wine, and added currents/sultanas and a ripe banana to provide some body, and used white grape juice instead of some of the water.

I was thinking on these additions myself.
I didn`t say sooner because I didn`t want to put you off the `Beer` aspect of it.

I’ve actually got 12 bottles of ginger and apple cider maturing in the cupboard - my first attempt at turbo cider. Not tasted it yet. Only been in the bottles a couple weeks. Figured I’d mature it till summer time. Also got apple and cherry turbo cider maturing too!
