Apple IPA

Right, I basically came up with a cool name for a would-be Apple beer, which has inspired me to make one.

I’m thinking some kind of IPA using apple juice.

I’m thinking ...

1 gallon

3 litres Apple juice
500g light spraymalt
7g Citra @ 30mins
14g Citra @ 0mins
14g Mosaic @ 0 mins

Add an extra 1.5 litres plus dry hop 7g Citra and 7g Mosaic after 4 days.

Thoughts? Any hints tips or suggestions?

Suppose it depends what you want to achieve from the beer. What you're brewing there is close to Graff, a blend of cider and beer. The beer side of the recipe is fairly similar to Vocation Life & Death so if you blend that with apple cider you'll probably get a fair idea of whether it's worth brewing.
The best apple beers I've had have all been saisons fermented with apple extract, comes out like apple champagne. But sod it, it's a gallon so go for it!

That takes me back to my teenage days when we used to drink snakebite!

Sure your drink will be nicer than the stuff we used to knock back though!

Man, these beer names jut keep a-comin to me! You heard it here first, people! lol.

Oh, aye. I never thought of snakebite. I used to quite enjoy that too. Or “diesel”, when you add a bit of blackcurrant cordial to it.

15lts Tesco Apple Juice
To 20Lts
SG @ 22deg 1068 (OooooH, looks promising)
1/6/16 Dry Hop 40gr Delta Leaf Hops
FG 1014 ABV 7.4%
Bottled and Kegged 5/6/16
The sup from the syphon tube tasted absolutely VILE! [-X
So I bottled and kegged thinking it would get better with `age`.
How wrong was I! The stuff was the most foul tasting thing ever to come out of a bottle.
Straight down the sink.

What did it taste like?

I’ve tried hopped cider before, and also that “Bootlegger Prohibition Apple Beer” (which was just like boozy appletizer), so I was just hoping for something like that but with a bit more body and head. Still, like it’s been said, I’m only doing 4.5L so it’s not too much to pour away if it is rotten!

Can anyone give me their take on this please....

I tried to make this apple IPA idea tonight. I shouldn’t have bothered. Maybe got a big ahead of myself...

I bought a 12l pot recently cause I’m going to have a go at making some small all grain batches. I was keen to use it, so I decided to do a small mash.

125g of pale crushed malt mashed in 1 litre of water for 1 Hour, then sparged into 3 litres of apple juice. 500g light spraymalt added, 30 minute boil,
7g Citra @30
14g Citra @ 0
14g mosaic @0

I cooled the wort (about 3 litres) and pitched in a half packet of muntons active brewing yeast. I took a gravity reading which was off the scale at around 1115. I’d been planning on topping it up with an additional 1.5 litres of apple juice at secondary, but I decided just to water it down just now with the juice. A second gravity reading was 1090. I didn’t want something that would turn out far too strong, so kind of panicked and halved the wort into a second Demijohn, just over 2 litres in each one. I topped one up to 3.8 litres and took a gravity reading - 1030, and I topped the other one up to 3 litres and took a gravity reading - 1050.

Not sure what I’ll end up with now....

Headache....

Might just be one to chalk up to experience! Lol.

Are you temp correcting your readings? 150g malt in a litre gives about 1.040 iirc. No point in chucking it, might be amazing, like apple brandy!

Oh no, I’m not planning on chucking it! Nothing that drastic! Lol. Having slept on it, on consideration, I shouldn’t have panicked and split the batch and watered it down so much.

The muntons yeast is apparently good up to about 8%, so at 1090 it would’ve maybe fermented out to about 1030, likely giving me a sweet beery cider.

Having watered it down so much, I’ll probably end up with one dry 3.5% batch and one dry 5.5% batch.

The gravity readings were taken at 70*f.

Diesel was called “ leg over” by the rather dubious young women drinking it in Walsall when I was a barman four decades ago!

I think what I’ll probably end up doing is I’ll mix both DJs of beer together at priming time. That way I’ll have one big batch or identical beer rather than two small ones.

lol. I slept next to it, hugging the demijohn like a teddy to keep it warm

It smells amazing in the cupboard. Don’t think I’ll bother dry hopping it, cause it smells really hoppy already and ... incase it’s watery crap ... I don’t want to waste my hops!

I probably will go back and make another one, following the recipe above. Probs won’t bother with the mash next time though. Think I got a bit ahead of myself!

I had a bottle of this tonight and basically it’s amazing. Not much head on it, but oh man...

It tastes almost like apple sherbet. Passion fruit and apple flavours. Incredible. Very very happy with it!

Oh aye, and when it came to bottling time I mixed the two demijohn’s worth of beer together in a big pot and batch primed the 7 litres of it with 100g of golden syrup. It’s quite lightly carbonated, but perfect.
