Have you looked at Brewdog's recipe for Elvis Juice, they have published them? Their method of using grapefruit would help.
I am "The Little Red Brooster"

Not peel, just the zest else it gets too bitter. And not just the zest, lob the flesh of the grapefruit in there too. I boil mine for a few minutes then bag it and add directly into the FV, takes less than a week to deplete anything useful and leave you with a bag of bland mush. Never tried adding to the boil so can't comment on that bit.

I zested and juiced mine. Put the juice in at the end of the boil and put the zest in just enough vodka to cover for a week and lobbed it in with the dry hops (amarillo) for 3-4 days. The grapefruit taste was really prominent bit not overpowering.

When it was ready it was all gone in a week over Xmas and I can't wait to make it again.

Yeh, I meant just the zest and I have read the white pith is bitter, I was just going to add zest 10 min boil and same zest in vodka and add the lot in secondary with some citra hops, wouldn't the juice of the grapefruits make it to sharp?

Nah there was no sharpness that I perceived, it's a drop in the ocean in a 5 gallon brew.

you could go above 1 grapefruit in the FV. I usually put 3 (zest) at flameout and 2 after fermentation ends. it's not too much
