A friend recently passed me a bottle of 4.8% 'Toffee winter ale', from a well known budget supermarket, with the challenge of trying to make up a batch. It seems to be a standard winter warmer with heavy toffee and little hop flavour. Not trying to get an exact match but more a toffee winter ale.
I'm thinking of trying a mix of melanoidin/caramel malt with some dark candi sugar. Ferment it fairly high to keep the sweetness.
Wondered if anyone has had a crack at something similar?
