Schlosser Altbier
A friend has just brought me a bottle of this from Germany, and I'm impressed! Best bottled beer I've had for a while, so there's a challenge straight away, got to recreate this. Absolutely no idea where to start, anybody brewed an all grain altbier from scratch??

Google returns one brewers friend recipe claiming to be Schlösser Altbier, but it uses an American ale yeast which doesn’t sound quite right to me:

Well that recipe wouldn't match with the description of Altbier I have. I doubt an old beer would have the newer grain, more likely to have darker grains as well as an old time ale yeast. Then again, you did want something like the bottled beer you enjoyed. It would seem an Altbier could be almost anything.
Without patience, life becomes difficult and the sooner it's finished, the better.

Munich malt 3500 grs
Vienna malt. 1400 grs
Crystal malt 510 grs
Saaz hops 115 grs at start of boil
ABV. 5%
EBU. 48
Colour 45 EBC

A German ale yeast, alt or kölsch strain (more or less the same thing in the brewery, apparently). Something like Wyeast 1007. Ferment at about <15*C to keep it clean then lager for 4 weeks or so.

Well, parcel from The Malt Miller has just arrived
and this is what I went with: -
19L
Crisp German Pilsner 1800g
Crisp Dark Munich 1800g
Simpsons Caramalt 180g
Wey. Melanoiden 180g
Spalt 50g at 90m
Spalt 15g at 10m
SafeAle K-97 yeast as I was shocked at the price of the 1007 and 036 liquid yeasts.
Balanced Cl/SO4 water profile.
I'll let you know in a couple of months what it's like.

Yes, cost of liquid yeast has probably doubled since I last bought a pack. I think it's definitely worth splitting a pack into several aliquots and making starters at that price. I haven't used SafeAle K-97, but I'm sure it turns out fine. At least you'll have a baseline for comparison, if you pursue the style further.
