lager malt 6150g,carafa special 200g ,hallertau hops 40g [90mins] O.G 1056,25ebu final gra 1014 alc abv 5.7% 23litrs brew lenght 90mins boil and single infusion 65c.I wonder could i use WLP380 Hefe yeast with this ?

You could, but without any wheat you won't get much of the true dunkleweizen character, some maybe but not much.
Are you going more for a dunkel? In which case adding some munich and using a lager yeast would be the best plan...
