St Austell's Tribute

Post by smp465 » Mon Nov 26, 2007 9:27 pm

Has anyone got any ideas on cloning this little beauty? I know the hops used are Fuggle, Williamette and Styrians and i have based the grain on the Free Beer project recently carried out at St. Austell Brewery. Thinking of trying this:

3750 Maris Otter
450 Munich
450 Brown Malt
450 T. Wheat

Fuggle and Williamette at start of boil, more additions of these between 20-10mins, and Styrian for last 5 mins and at turnout. (To get~IBU30)

Looks interesting but not sure about the brown malt? The website states Maris Otter and Cornish Gold malts, and I've not tasted brown malt in the ones I've had.

Let us know how it goes as I'm fond of Tribute 8)

Just tried it in Beersmith, colour looks about right. I've never used brown malt so wouldn't know what to look for. There is definitely something about the bottled version that is not so pronounced on draught.

Did you make this in the end? If so, how is it?

Not yet, got all the ingredients in, then spent my planned brewday sorting out my sick car. Gonna be my 1st New Year brew. Will post it up, of course!

Mmmmm Tribute.
Brown malt seems out of place. At a bit of a loss to describe the flavor of Brown malt but I use it in a porter - maybe nutty and roasty?

Hopefully someone else can give you some more info.

Was a nice beer (not just my opinion) and although showing some promising resemblence to the commercial brew, not as close to the "real" thing as i'd hoped. This is what i did:

4kg Golden Promise
0.55kg Munich
0.35kg T. wheat

28g Fuggle (4.5%) 90 mins
35g Willamette (4%) 90 mins
15g Fuggle (4.5%) 20 mins
18g Willamette (4%) 20 mins
20g Strrians (3%) 10 mins + some at 0mins

Colour was good and i would go with this grain if doing it again. I would hop differently next time and definitely would not use S-04 as i did here, and/or modify the mash temp. Biggest problem/difference was the sweetness of my attempt!

Let me know if you take on an evolution. I have some other brews planned, but will likely revisit this some time.
Drinking: Double IPA (Mr President Clone)
Drinking: London Porter (5%)
Drinking: Belgian Dubbel (8%)
Conditioning: West Coast Red (5.6%)
Conditioning: Nelson & Friends Series No.1 (Mosaic)
FV: A few spiders
Planning: Everything else!

This is my favorite beer!
I want to try this recipe though I have a hard time locating ingredients here in Canada.

Whilst in Cornwall last week SWBMO and I went on a tour of St. Austell brewery. I'm sure the guide mentioned they used Cascade hops in Tribute. That would explain the citrus note to it.
