Let's face it, Ian; There's eighty five pages of shit to plough through here. That's enough for any body.

If it starts going off at tangents? They could find themselves trying to pick the relevant bits of of a Hundred pages. And that's just not fair. So, without direct editorial ability, I try to keep it steered on course.

This definitely does not read like the words of the Ditch we've all come to know and love. How do I test to see if this is the real Ditch??? I know...

...what sort of airlock should I use? (That should flush him out). :D

Im just posting a recommendation for Ditchs paint stirrer paddle, I tried it works a treat. I also used to use hot water to help dissolve the malt as recommended by many people, yeah it does seem to dissolve the malt easier, but I found the finished brew temp was always to high for me to chuck in the yeast, Well after only using hot water to finnish emptying the can, The finished temp was at 23 centergrade good enough for me to throw in the yeast.[ with paddle no hot water needed to dissolve malt ] Bert

Hello Berts,
Fill some used, cleaned, sanitised Chinese take-away containers with water and freeze them. 4 at least, when you are at 15Lts in FV, check temp, keep on filling with water or big ice blocks to suit temp!

Well, I've been 'dabbling' in this brewing malarkey, for on & off, well a few years now. Have tried all sorts of brews, wines turbo cider etc. Anyways, even though I will now & then have a bash at the odd other kit, I have to say that Ditchs stout is the bollocks! Its easy to make, reasonably cheap, very reliable & if you make the odd 3 gallon batch ( for a party! ) then you have it all. Best brew ever, I have 3 kegs now, all full of the stuff. Keep it simple guys, keep it Ditchs style!

3 Gallon Stout is for you! Party people won`t appreciate the sublime, velvety, smooth, beautiful pint in front of them! Give them any old stuff in a party and they will drink it!

Hi Wales, I hope I don't need to use the ice blocks now im using a superior method of mixing the malt in :D brew is under way with a nice brain on top as we speak.

After some use the corners broke off and then some more edges broke off, and lo and behold, I had a round wheel! Of sorts!
