Don't lose hope! One of mine was really uninspiring straight out of the FV and into the keg. A straightforward English style bitter at about 4.8%. Two weeks later and it's really perked up. Enjoying a pint of it now.

I was thinking about priming this with honey, would it work, taste ok?

Priming is about getting the yeast to produce gas to give the beer a sparkle. Honey may do this, but its flavour contribution at priming levels would be close to zero.
