Yeah I've built a bar in my home so we have a lot of visitors. I suppose it could be called a microbrewery now. Everyone who tasted the stout this week were big fans!

After reading this thread a couple of weeks ago all the positive comments convinced me to brew this as close as I could to ditch's recipe. Well about 30 minutes ago I bottled 5 litres of it and kegged the rest and straight away got in about it. First couple of mouthfuls I wasn't quite convinced, but half way down the pint, and yup, and this stuff is really good! So thanks for keeping this thread up to date and answering questions, I dare say I'll be making this again. Cheers.

 I can't quite work out how I seem to have missed ~ thus, seemingly, 'ignored' the last three posts here. Sorry, guys!

Anyway; Sananman: Great to hear that ye friends too enjoyed it. A man who's put the work in could convince himself. But, friends who simply accept a drink? They'd be more objective

Offkilter: Six pints of 'my' stuff down ye neck? Yep. Calling me names would be about par for the course ..... for a f**king light weight! Image

Nah. Again; Good that ye enjoy it, mate. Curious as to why ye thrashing it led to a clean up operation though. The Spew normally does that .....

Aceface: Think of me as ye enjoy that gear. I'm sat here knocking back Karpackie lager! Don't really remember what went wrong there. Seem to think I dropped a whole FV, ast month? Then, a cock up with the pick up, this month ..... Found myself days behind #-o

Never mind. I screwed it down on Wednesday. Couple of FV's have already Blown. Might well be amongst it on Monday. 'Fact; Thinking about it? F**k Yeah! No Way am I paying a taxi a tenner, just to bring me another tenners worth of Polish Tramp Juice out here, for one night!

Anyway, by Monday evening, it'll have had Five F**king Days?!? Christ! That'll be a positively 'Mature' Fermentation then! Well back amongst it, Monday

Right.....! I have over the past few nights read through the whole thread. I am a newbie to this game and my brews have been limited to two kits:

"The Range" Stout - brewed as per pack instructions. Kegged a week ago and drinking now. Ok, a bit thin though
Geordie Mild (because it was half price in Wilkos) brewed with 454g LME and BKE. Kegged yesterday. Tastes promising.

Now.... next up will be Ditches Stout, brewed as per Ditch's instructions but with some Fuggles hops infused in a tea infusion.... and possibly some chocolate malt stirred in on day 7

Nah only prodding ya Ditch.

I managed to find a cheapish paddle stirrer listed on B&Q for £8 (was getting stressed before this as couldn't find one for less than £20 [-X

My question is - raw cane sugar.... Nowt comes up when I search Tesco, Asda or Sainsbury. Anyone got any advice on this? I could use demarara I guess, but would like to follow Ditch's instructions to the letter. I've found three different types of sugar come up when I bung in 'raw cane' into Asda's search engine - muscovado, golden caster and demerara. I know you say this is what you get in town Ditch, but can anyone on the mainland advise please?

Mmm. Can't say as I particularly like the sound of any of those. Muscavado? No f**king way! Not that there's anything wrong with it, per se. I've used it myself in the past. But, it's just so dark and severe, it'd take this recipe into another realm altogether.

Golden Caster just sounds hellishly expensive and for an unknown commodity. Demerara's probably closest. Still not sure though.

Haven't ye got an independent 'Whole Food' shop in town? Even a Holland and Barrett? Places like that's where to find Raw Cane. It's just unrefined sugar. Looks like a slightly finer grained, lighter coloured Demerara. Tastes f**king lovely too.

Of course, failing all else? Just leave the sugar out. I do. Much more often than not.

Paddle stirrers often turn up in the "£1" section of DIY stores so its worth keeping an eye out.

BTW, I have seen unrefined cane sugars in one of the major supermarkets, but I cant remember if it was tesco or asda - you need to be looking in the organic products aisle tho

I first ever bought RCS in a major supermarket. I think it was in Hull ..... Wasn't Morrisons. I remember discovering them later. So, this was probably Kwik Save (?) I can actually see one of their red, plastic baskets from this chair.

Aha! Yes, the incredibly brilliant " Seeger Sessions " album, by The Boss, ended right there. Thus I was able to get up and look. Kwik Save is the basket. I'm guessing that may have been the shop? Either way; They stopped doing it #-o

Anyway, yeah; Whole Food sort of shops are the place to look. Buy it loose.

" Paddle Stirrers "? Not even certain what ye talking about there. I show a photo of my one, on here, I think?

Nothing to do with plastic, Home Brew kit. Made of steel. To attach to a power drill and thrash the sh!t out of a bucket of Artex. No idea what they generally cost. Priceless though. I simply couldn't manage six FV's at a time with a stupid bit of plastic! Arms would atrophy!
