Well, Iv'e been intreagued for a while and yesterday popped into my homebrew shop while I was in the area and soon spied their only can of coopers Irish stout, so with this thread in mind, I had to have it. £14.20 for it and a kilo of muntons beer enhancer( all they had) I was off home. stuck it on last night and added 210g caster sugar. now i do use a hydrometer out of interest, and it shows an expected ABV of 7.5%, 1048 degrees. is this what the rest of yous are making it too? (off course i know Ditch you don't use one of these) even if it comes out a tad elow I don't mind. I am lookinh forward to it, and as usual, I'll be drinking from the fv as I don't own a keg!

Sorry, mate. I honestly can't offer a word of advice there. Because what you're doing is about as close to what this entire thread's been about as pickling badgers

Still; I'm sure ye own stuff will turn out as 'New' and 'Interesting' .....

@ Ditch, AWW, hang me head in shame, i'll go back into me rabbit hole! the woman in the shop told me it was just the same. ah well , i'll see what its like and then ensure i get DME. caster's just smaller granules that any white sugar me thinks.

@seymour and ditch, now im confussed! Ive thomas coopers irish stout, which as to us in the north, Eire and Irish are the same thing. frig me if yous are making somrthing else! In for a pound, in for a penny, i'll be drinking this ,lol

well having digested your comments and googling coopers stout, my tin of coopers irish stout is differnt picture wise ( same austrailian company tho), maybe just different branding for the country of sale?, i don't know, and I now see you mean what we call brown sugar or demerara sugar ( i presumed it was white, silly me) lesson learnt. funny the differences of 150 miles. however interesting thread with lots of good info and input.

Personally? I'm not of the " Professional Tea Taster " level to be able to perceive and describe the exact differences. I just know that I noticed them. I prefer their 'standard' stout kits.
Ironic, really. They sell their " Irish Stout " as the Premium version? Oh well. I feel that, treated right and provided the right adjuncts; The 'lesser' version can bring us more

You've put yeself in a prime position here, of course. Carry on and enjoy ye own stuff. Then, maybe, follow my own instructions, precisely, next. See how ye feel the two compare.
I've done their " Irish ", my way. Not saying there was anything wrong with it. Just that I preferred their 'Standard', my way. And their standard stuff's cheaper. More for less? Can't be bad!

and as no ones mentioned it brew enhancer (well muntons ) is 500g brew sugar and 500g dme i know coopers do there own 1 and 2 and i anit sure whats in there. ive recently done one (its upstairs brewing proberly ready but im full of man flu atm) due to a technical mess up my wife only ordered only 500g of dark dme luckly i had a bag of light dme in so thats gone into the mix next time ill be doing it 1kg dark dme then im thinking of a extra dark dme but only with a 10 litre brew and 400g of dark sugar

I got a Coopers on the go last Saturday, following Ditch's recipe to the letter. As expected it spewed over the top but it was no trouble as I had placed the fv in a flexi bucket. As I had to go away for work for a week on Monday, I wondered whether all would be well in my absence, so I dipped a finger in the bucket and tasted the liquid from the krausen that had spilt over...
... Bugger me it was BITTER...
(I could still taste it on Wednesday! I guess that teaches me not to try that again!)
On my return last night, 6 days in, I took a sample from the fv. OH MY GOD. Rich, nutty, toasty deliciousness. If you have ever been contemplating doing one of these stouts contemplate no more. Just do it. It tasted better already than I could imagine it tasting after 8 weeks maturing in a keg .
I'll leave it another 3 days and get it in the Keg. I was intending to save this for Christmas.

ditch will be dissapointted 8 weeks in a kegs i know its stuff of legends but its meant to be drunk not admired

bottled it yesterday at half 4 yesterday wife came in a 10pm claiming she had run out of beer so i gave her a 2 litre pet of the ditchs stout even it only been carbonating for less than 6 hours and she bloody loved the stuff claimed it was like cannabis in a bottle her and her friend couldnt stop laughing after drinking the stuff, shes demanding i get more on the go so ill have to oblidge im guessing such a hardship.....
