What's that Brewfridge all about, Lee?

And, are ye a Kegger or a Bottler? Only, I see ye have something called " Blackmoor Stout " ~ is it? ~ on the go right now. I'd love to hear ye one on one comparison, if ye could keep a bottle or two of that back and try it alongside " Ditch's ".

Whilst I recognise that ye Blackmoor would always be far more matured, by the time ye get this gear ready; I have to temper that fact with the point that I've always said my stuff can be drank straight from the FV.

So, there's a gauntlet, eh? I'm willing to see ye compare " Well bottle matured " stout to my stuff, just as soon as ye feel it's ready. I'm confident my gear, even if ye really must bottle the bloody stuff, will give what ever other kit ye used to a run for its money Image

So proclaims Ditch the Confident In His Own Gear! Image

Well I cracked the last 2 litre bottle last night and its been in there 2 months or so and tbh drink as ditch says within a week not worth letting mature as it doesn't noticeably get better yep it smooths down but nothing spectacular worth waiting 2 months for brew and destro the lot within 2 weeks

Hello Ditch, a newbie who would like to pick your brain please; went to wilko's today and bought a coopers stout to follow your recipe but couldn't get dark or medium malt and had to buy BKE, what will difference be in your opinion and also; last thing at night when I added sugar and yeast, I didn't stir/paddle it in just poured it in and put lid on. Will this be ok? Thanks in advance.

" MagnumK9 " ? Is that a come on, or what?!

BKE? I, at no point in this thread, mention having used it. That being because I never have. Nor would. It wouldn't create " Ditch's Stout ". Not as I've just swigged it.

" last thing at night when I added sugar and yeast, I didn't stir/paddle it in just poured it in and put lid on. "

Okay. Let's look at this in the light .....

I honestly can't comment on what ye've done there. Because it's about as far removed from what I have been proselytising in this thread as brown bread and concrete.

See what happens. Then be happy. Because ye'll then know: Do what I've written here and get a better result

Thanks for the reply Ditch; couldn't get DME so will order online next time and just wasn't sure on whether to stir in yeast or not. Happy New Year.

 Man? If ye can't get DME locally, then that's Not a LHBS worthy of the name. Yes; Do check out the on line suppliers people rate in your country.

Never stir the yeast in. That's my advice. That's the most vulnerable point in the creation of ye beer. Why on earth would ye want to go shoving something into it (paddle) that could conceivably bring infection with it?

Remember: Ye dealing with a Malt Solution there. That's all it is. Only after the yeast kicks in and the process starts that it becomes Wort. Then Beer. And the wort is protected by the gas created as the yeast works amongst that malt solution.

So, see what I'm saying? The malt solution is, to my mind, the bit that needs the utmost respect.

Still fascinated with ye handle. Into the Dogs ....?

You need to dissolve any sugar/spaymalt so it can be eaten by the yeast, just poring it in will mean that the sugar will go straight to the bottom and just sit there. Make sure you dissolve any extra fermentables thoroughly.

Image Thanks, CJ. Well spotted. I'm a little preoccupied.

Frankly? I'm finding it difficult to sift through what K9 wants and is doing here. Because he doesn't appear to have read a word of what I've advocated throughout this thread. Guess I forget not to assume he has :|

Ye'd know, yeself, of course that I " Unleash Hell " on my fermentables. It's once my heaters have kicked in that I sneak back and sling the yeast under the cracked up lid. Then I tip toe away and leave it to form CO2.

Just put this Stout recipe to the test. Brewed it yesterday, today it's looking healthy with a nice fermentation going on. I have a lot of faith in this one.

And so you should, it's a cracking kit and ditch's method is fool proof, even though I went AG a couple of years ago I still chuck the odd Ditch's stout on if I am pushed for time.

Ye won't be disappointed, Nigel!

Look out for the " Brain " first. I've never seen the likes of it elsewhere. F**king great 'meringue' sort of effort comes up. Looks, quite simply, like a big, beige brain!

Then, it blows and Spews ..... God help ye if ye brewing this shit, my way, on a carpet .....

Haha, it looks like it's at the brain stage at the moment. It's fermenting nicely, just above the washing machine. She'd go balistic if this thing spewed all over it. Plan B, I better move the thing.

Yep, I can't believe it's that bad, or good. As long as the final drink tastes good, it can erupt all it likes.
