I've made this several times now and it's always a success. Now, I'm sure I saw an extra strong variation of the recipe here somewhere, but am too lazy to go through 50 odd pages to find it. Am I imagining things, or does such a recipe exist?. Cheers.

GC; As CJ says, I did indeed once make this stuff up to just three gallons. It was accidental

But; If ye want a stout to Really impress ye friends, and rip ye f**king head off at the same time? And which doesn't cost a small fortune, and take Years to be ready? Ye could do a lot worse than taking This one down to three gallons. It's quite the experience!

Dark Spraymalt arrived this morning, Ditch`s Stout made up to 3 Gallons as per instructions. Heater on, Front room door shut, let`s see what happens. OG was 1054, I thought it might have come out higher than that but never mind, it`s done now .

What good is a beer so strong that one pint f**ks you? Stuff I'm drinking now is four gallons. I find this the perfect medium. Tastes bloody sublime and still gets me talking with animated enthusiasm after a few.

Time for an update on the brew. Mine has now been in the barrel around five weeks and has settled down to become a fabulous brew that I adore and my wife hates! Perfect, she won't be nicking any of that then
. The coffee flavours are still present and the brew has a very faint chocolate-like sweetness rather than the bitter astringent quality of Guinness. There are bucket loads of other flavours in the brew too; my palette is not sufficiently discerning to identify them all, but I know that they add up to a very pleasant way to spend an evening.
The pressure in the barrel returned after about ten days in the cool and the brew is still serving nicely with a good head that lasts to the bottom of the glass, but no apparent fizzyness in the mouth. Perfect.
Every time I lift a pint of this stuff I give thanks to Ditch, the god of black magic brewing.

I really ought to get another one on, but it will have to wait until I get another barrel; I only have one at present and my local Wilko did not have any in stock at the weekend. No real rush though, I'm thinking about my Christmas brew list now and this stuff matures fast enough that I could put it on at the beginning of December and still have a well aged pint on Christmas Day.

The 3 Gall batch is ready, it`s down to 1010 from 1054 so it should be good for 6% ish! Just had 1/2 pint from FV and it is Bloody lovely mun! My whole face feels aglow after just a 1/2. OMG what have I done! Been in FV for 10 days, trug heater off day 7 at 1010, going to bottle it on Saturday. (Don`t tell Ditch)!
