Winter storage in sheds/garages

Post by Matt » Tue Dec 19, 2006 11:09 am

I bottle most of my brews and am just wondering if there are any issues with leaving them in the shed during the winter - do the low temperatures affect condition?

Cheers,
Matt

Presumably I'll have to bring my barrels inside once it reaches freezing temperatures? Like it did last night #-o

Ooh! Ever hear of Eisbock?

It's a German thing where they get an already high alcohol Bock Bier, freeze it and remove the ice to make it even stronger.

I happen to be blending an old barley wine (11.5% ABV) and a new beer (4.5% ABV) to make something around 8%, but since they are predicting a temperature of -1C for Dublin tomorrow, I might put it outside and remove any ice that forms.

Naturally I'll be doing this in a plastic bucket.

This is also something they do with cider.
Freeze distilling can concentrate methanol and fusel alcohols (by-products of fermentation that true distillation separates out) in applejack to unhealthy levels. As a result, many countries prohibit such applejack as a health measure.
possibly not a good idea to do it in uncontrolled environments.

Well I wouldn't want to take it to extremes. Just boost the ABV by three or four percentage points.

Not trying to make whiskey here.

Cheap distilling

Get the same effect from using your freezer, if allowed
