Someone else will be able to explain this better than me, but you don't have to worry about beer going off in the same way that food does. A moderate strength beer should last over a year, maybe much longer. Stronger beers will easily last a good number of years. It's maturing during this time so the flavour will change, sometimes in quite a subtle way. Since most homebrewers don't filter, the yeast eat up the oxygen in the bottle and turn it into CO2, helping to preserve the beer. I'm not sure if temperature will be that big an issue, but I suspect it would speed up the maturation.
